So here's the thing: I'm not sure it's actually possible to have a round, layered carrot cake without frosting carrots on top. But I think cupcakes and possibly even sheet cakes might be excused.

Aren't the carrots there to give your intended diners a clue? A placard, a verbal statement, the presence of an actual carrot, a mutated giant carrot guard, or a carrot-top video could all serve the same purpose. (Although the video might make some people lose their appetite).

Favorite carrot cake story:

Once my best friend and I went out for Indian food. At the end of the enormous meal, we were offered the dessert menu. That being a rarity in Indian restaurants of our experience, we decided to take a look. One of the items was carrot cake, a favorite of both of us, and we decided that we had to have a piece, even though we were stuffed. So we ordered one carrot cake with two forks. The waiter looked shocked and explained that it is very small carrot cake. All the better, we declared. So he brought us the two forks and a lovely, two-inch diameter "cake" of grated carrots soaked in honey.

It was about one bite for each of us, very sweet, and perfectly nice. And really, what else would you call it? But it was not, so very not, carrot cake.

I have, as of yet, never made one of those icing carrots, but I like to believe I make a kick ass carrot cake.

(Auto correct wanted that to read "corrupt cake". I'd like to make a kick ass one of those too.)

Preferably carrot cake would have no frosting. I believe I am the only person who feels this way though.

Kimcobs rules for carrot cake:
NO PINEAPPLE
Yes to walnuts
DO not care about the carrots out of orange frosting but do believe they give diners cues
Can do with or without frosting but if it is without a whipped cream would be lovely.
It is my favorite cake but I was not the adulterer.
