1. Preheat oven to 375
2. Remove giblets, if present, from duck. Rinse, pat dry.
3. Trim fat off duck.
4. Poke lots of holes in duck's skin.
5. Rub with salt and pepper, inside and out.
6. Truss, place on V-rack in roasting pan, put in oven.
7 - N. Turn every 30 minutes or so, alternating with
8 - N+1. Turn off smoke detector whenever it goes off.
Note to self: next time, maybe in the summer with the windows open?
